Chocolate protein and blueberry muffins

A quick breakfast or post workout treat to give you a boost of protein, Omega 3 and antioxidants. Gluten and sugar free too!

Makes around 10-12 Muffins

 

1 cup of rice/coconut flour

2 scoops of Natural Chocolate/flavour of your choice whey Protein

2 Medium egg whites

1/4 cup nut/coconut/cow milk

1 tsp. baking powder

1/2 tsp. baking soda

1 tbsp. milled flaxseeds

2-3 tsp. cinnamon

2 tbsp. of honey/ natural maple syrup

150 grams of Blueberries


Method

1.  Pre-heat the oven to 160 degrees

2.  Line the cupcake tray with baking cases

3.  Mix the above ingredients in a medium sized bowl, folding the blueberries in last

4.  Spoon the mixture equally into each case

5.  Bake for 15-20 minutes

6.  Once golden brown take the muffins out of the oven and allow to cool.
